Top ten rules for using syrups in a café

Adding a flavour for an extra charge doesn't work - create a drink!

Use strong visuals of the drink - a picture beats lots of words!

Put a name on the drink but be careful don't make it too poncy! Would you ask for an Alpine topped mocha with swirl

Unless you are in a very developed market for syrups don't display a long line on the back bar.

Fruit flavours generally don't work with hot drinks but can with cold.

Flavour your cream - vanilla is great in your general whipped cream and chocolate flavoured cream can add a premium to your hot chocolate. Here I am making the assumption that you are using a professional cream whipper not one of those horrid UHT squirties.

Promote - have a free flavour Friday occasionally. The investment will repay in repeat sales.

Do it properly - there is nothing worse than a drink either too heavily flavoured or not flavoured enough.

Charge a sensible mark up for your flavoured creations. At a cost of under 5p (if you are paying more you should call us - hey call us anyway if you got this far) see your syrups as a margin maximiser not as a deterrent.
10.
Don't forget children - flavours work great in drinks for them.
