Here is a really simple pancake recipe for Shrove Tuesday!

Make these delicious banana and Sweetbird Coconut Syrup pancakes in a few minutes. Why not serve them with cream and drizzle of chocolate sauce!

240ml milk
120g flour
1 large egg
1tsp caster sugar
2 Pumps of Sweetbird Coconut Syrup
3-4 Ripe Banana
Pinch of salt

How to Make Wholemeal Banana Muffins

Sift the flour into a large bowl. Add the egg, sugar, salt, Sweetbird Coconut Syrup
and 1/3 of the milk. Whisk together until smooth.

Add the final milk and continue to whisk, strain if necessary.

Heat a non-stick frying pan and coat with vegetable oil or butter.

Pour in some pancake mix, tilting the pan so that the mixture spreads evenly. After one minute, using a spatular if you need to, flip over your pancake to fry the other side.

Slice up your banana and place the slices in the middle of each pancake as you make them. Roll them up and serve while warm. You could also add fresh cream and drizzle with chocolate sauce.

You can keep your batter in the fridge for up to two days; just re-whisk before use.
