Classic Coffee Cake

YOU WILL NEED:
FOR THE CAKE:
- 1 tbsp Caffé Prima Instant Colombian Coffee dissolved in 1tbsp of hot water
- 170g caster sugar
- 170g butter
- 3 large eggs
- 170g self-raising flour
- 1½ tsp baking powder
FOR THE ICING:
- 225g icing sugar
- 100g butter
- 1 tbsp Caffé Prima Instant Colombian Coffee dissolved in 1tbsp of hot water
HOW TO MAKE:
1. Grease the baking tin and pre-heat the oven on gas mark 3 (160°C/140°C fan).
2. Whisk sugar and butter in a bowl until you have a fluffy consistency.
3. Whisk the eggs and add them to the mixture along with the flour, little bit by little bit.
4. Fold the mixture in gently and add the dissolved coffee mixture while still folding.
5. Pour the mixture into the baking tin
6. Bake for 25-30 mins.
7. Make icing by beating icing sugar with butter and dissolved coffee.
8. Once the cake has been removed from the oven, let it rest for 5-10 minutes before adding the icing.
